WINEMAKING:

In addition to a vineyard sorting, clusters were hand-sorted in the winery, gently destemmed and crushed directly to two ton stainless open-top tanks and 600L barrels for fermenta-tion. Jack-stems were removed by hand. Most lots were cold soaked for two days. Fermentations were started slowly, with punchdowns by hand occurring one to two times a day; macerations lasted from 10 to 21 days, depending on the individual lot. At the completion of maceration, free run wines were transferred to barrel. The caps were gently pressed using a stainless basket press and then settled for up to 2 days before being transferred to barrel. The wines were aged in 100% new Burgundian French oak before being bottled without either fining or filtration.

CHARACTER:

The 2006 Melis shows a deep purple black color, with beautiful aromas of black cherry, tobacco and violets, as well as unique mineral notes derived from the licorella slate of our vineyards. The palate is full and rich, with a silky texture balanced.

WINEMAKING:

It is a wine from the MELIS ESTATE in Torroja del Priorat, a place where the sun rounds the tannins and concentrate the aromas to reach their maximum expression. Grapes come from the vineyard that is hand harvested later, almost at the end of November. In addition to a vineyard sorting, clusters were selected by hand in the cellar, gently desstemmed, jack-stems removed by hand and placed in 2 ton stainless steel square tanks and 600 liter open barrels for fermentation. Fermentation was long and slow, with a maceration of about 35-40 days. Later, the drop wines were transferred to the same barrels and aged during 18 months. The remaining skins, so matured, were pressed very gently to obtain a high content of mature polysaccharides, responsables of its great volume in mouth, very characteristic among all of MELIS wines, a symbol of our winemaking style. 100% of the wine was aged in French oak burgundy barrels and later bottled without any clarification or filtration.

CHARACTER:

Melis presents a deep dark purple colour with beautiful flower aromas, expressing the extreme maturation of Grenache, blackberry, tobacco and violets, as well as mineral notes that come from the slate soil (“licorella”) of our vineyard. The palate is full and powerful, with a silky texture balanced by fine tannins and polysaccharides providing a long finish.

We recommend decanting this wine between 45 and 60 minutes before tasting.

Cherry color very intense. Mineral aroma, very toasted (roasted), warm, ripe fruit. Mouth powerful, fleshy, concentrated, ripe tannins.

WINEMAKING:

Elix represents the shy brother of MELIS. A hidden spirit, more affordable, and great price/quality ratio. In addition to a vineyard sorting, clusters were selected by hand in the cellar, where were gently destemmed, jack-stems removed by hand and placed in 2 ton stainless steel tanks and 600 litter open barrels for fermentation. Fermentation was long and slow, with a maceration of about 35 days. Later, drop wines were transferred 300 liter second used barrels and aged during 15 months. This wine was bottled without any clarification or filtration. .

CHARACTER:

Mostly made with Grenache, it also includes Cabernet Sauvignon and Carignan grapes. His Priorat personality is evident; the Grenache is expressed from beginning to end. With a little aeration it shows its intensity, power and maturity without losing the refreshing texture of its fruitiness: black cherry jam, plum and fig. In the nose notes of clove, cinnamon and a toasted end shows typical spices of an Arab garden, coming from the sun reflection on the slates of the Priorat. In mouth, the fleshiness and the mature tannin of Cabernet Sauvignon make this wine with a great evolution potential in bottle.

``Pretty bright purple red color, with good tear that ink the glass. On the nose of good intensity, black fruits predominate, very mineral notes and touches of leather. ``

WINEMAKING:

In addition to a vineyard sorting, the clusters were hand-sorted in the winery, gently destemmed, jack stems removed by hand, and crushed directly to two ton stainless steel open-top tanks and 600 litter barrels for a short fermentation of 12 days. At the completion of maceration free run wines were transferred to French oak burgundy barrels for 6 months. The remaining skins and seeds were gently pressed. 100% of the wine was bottled without any clarification or filtration.

CHARACTER:

OBRADOR is a wine from north oriented hill slopes, modern and youthful style, with soft maceration and little extraction to preserve the fruit and freshness. Combined a gentle barrel aging of 6 months OBRADOR remarks the character of the fruit without influence of the barrel. This wine has been produced manually with grapes from its owned organic vineyards, with low yields. Elegantly combines the softness of the French oak with mineral and ferric notes, the freshness and the intense forest fruits and cherry, typical of the best slopes of the PRIORAT.

Pillory color of middle layer with an abundant tear in the glass. The palate is powerful and fleshy with a warm entrance.

WINEMAKING:

This is a young wine from old vines. The vineyards are located in El Molar (Priorat region) and range from 40 and 80 years old. After a process of hand harvest and selection in the vineyard and the cellar the grapes were desestemed and placed in French oak 600 litter barrels for a period of maceration and fermentation. A gentle extraction during the fermentation allowed a balanced wine. After fermentation the wine passed for a period of reductive aging of 6 months in stainless steel tanks. This wine was bottled without any kind of clarification or filtration.

CHARACTER:

Old vines have the ability to make wines with great structure, concentration and power. The colour of the wine is intense purple. In the nose a intense red / black fruit and spices appears and it develops extraordinarily in glass. In mouth the ripe tannins are perfectly blended with a well balanced acidity. Notes of plum jam and red fruits become intense on the palate, along with ripe tannins that provide a pleasant silkiness. The long maturity of its Grenache fruit adds complexity to this Mediterranean wine.

WINEMAKING:

This vineyard, 5 km away from the Mediterranean Sea, grows on a sea floor formed by fragments of shells of bivalve molluscs and gastropods, which, together with calcareous cement, bring to the wine mineral and earthy notes with a fresh acidity. After a selection in the cellar and a soft pressing, the must passed its alcoholic fermentation process in stainless steel tanks at a temperature no higher than 24º C. Later the lees were decanted and again in stainless steal tanks to perform a malolactic fermentation during 40 days.

CHARACTER:

Pale yellow and bright, the nose shows intensely the expression of the Mediterranean clay soil, with notes of very subtle white flowers. Mineral and saline accords at the end of the mouth that come together to give rise to warm sensations. After a while the ripe fruit with hints of peach and ripe apricot is glimpsed. In the mouth the malolactic fermentation wraps the previous feelings with a mellow and fatty touch.
